Yummy Quinoa & Veggies Salad
1 cup uncooked Quinoa (yes, you will cook this!)
1 medium-sized tomato chopped (or, cherry tomatos if available)
½ cucumber (or 2 mini-cucumbers), sliced
½ red pepper, chopped
1 cup chick peas (or ½ can of organic chick peas)
3-4 tablespoons extra virgin olive oil
Basil (fresh if you have it)
Garlic (1-2 cloves), chopped/pressed
Pepper to taste
Prepare quinoa – add 1 cup quinoa to pot with 2 cups of water (filtered is preferable). Allow to come to a boil, then reduce heat to half and let cook for 12 – 15 minutes. When done, rinse quinoa to clean off saponins and add to mixing bowl.
Then add chopped tomato, cucumber, red pepper, and chick peas and toss. Add olive oil, basil, garlic, and a dash of pepper to taste. Squeeze juice from half a lemon to mixture (or more if you love the flavour!). Mix all together and let sit in fridge for an hour to mix flavours. It is also fine to eat right away if you just can’t wait! Enjoy!!
